Tutorial Tuesday: Sour Cream Muffins

The amazing deal ($.45/container) on sour cream a few weeks ago has left me scrambling for ideas to use up the sour cream before it goes bad... so I found a delicious sour cream bread recipe at the Joy of Baking.com!

Ingredients: flour, sugar, sour cream, strawberries, eggs, cinnamon, vanilla, baking powder, baking soda and salt!

Begin by placing slices of butter in your mixer.

Cream the butter for a good solid minute!

Add the sugar, and continue mixing!

Next, add one egg at a time.

Followed by the vanilla.

In a separate bowl, mix the flour, baking soda, baking powder, salt and cinnamon. Add one third of the flour mixture to your buttery batter in your mixer.

Then add half of your sour cream. Alternate adding another third of your flour mix, followed by the second half of your sour cream, followed up by the remaining flour mix.

Your batter will look just as beautiful as this! Have I ever mentioned that I LOVE how beautiful cinnamon looks in a recipe? Or how yumm-o it smells?

Fold in your sliced/diced (I chose to dice) strawberries...

Bake and enjoy!

OK, so technically I found a bread recipe, but we prefer the ease of muffins (cute little mini muffins at that). If you'd prefer to bake a loaf of bread with this recipe, bake at 350* for one hour. If you are choosing to make muffins (peer pressure anyone?), bake for 35 minutes. I was able to make 36 mini muffins, which is the equivalent of 18 regular sized muffins.

Recipe Recap:
1 stick of butter
2 cups of flour
3/4 cup of sugar
3 eggs
1/2 cup of sour cream
2 cups of strawberries
1 teaspoon of vanilla
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

The sour cream really makes these muffins moist! You'll LOVE them!
