Tutorial Tuesday: Potato Skins

I LOVE potatoes! I love them as a side, the main dish, in soup and even as a snack! With so many deals on potatoes and sour cream lately, I just couldn't resist...

Ingredients: potatoes, egg, salt, cheese, sour cream and bacon.

Begin by placing two egg whites (for 5 pounds of potatoes), a tablespoon of water and a tablespoon of table salt in a bowl.

Whip the above ingredients with a fork until they get a little bit frothy... about 2 minutes.

Pierce each potato with a fork several times.

Roll each potato into the liquid, making sure to coat well.

I lined a baking sheet with foil, and baked the potatoes at 350* for an hour. I flipped the potatoes after half an hour, but it probably isn't necessary- it just made me feel like I was participating in the baking process!!!

I let the potatoes cool for about half an hour before I started handling them. Begin by slicing each potato in half lengthwise.

I choose to leave about half an inch of potato attached to the skin! Slide you knife around the center of each potato half...

And scoop out the center. (Save this for yummy mashed potatoes for later!)

Cut the cleaned potato halves into quarters.

Add cheese and bacon crumbles to your potato quarters before sliding them back into the oven at 350* for 10ish minutes! Dip your skins into sour cream, and enjoy! Remember, potato skins are the healthiest part of the potato... so its OK with me if you you eat a couple more than you intend to...wink!

Looks delicious I will have to try this some time. I love love love potatoes myself!

yum! Or - if you wanted to - take the "guts" of the baked potato and dump into a mixing bowl with a couple scoops sour cream, some bacon, shredded cheese, a splash of milk, couple pats of butter and a sprinkle of Lawry's season salt. I never do exact measurements, just keep tasting it until it's "right." Mash that mixture together and fill the skins back up and bake in the oven until warm and bubbly. Twice baked potatoes!!! :-) They also freeze well, I try to have some in the freezer for last minute sides to meals but they never last long in there!
