Pancake Update:

Occasionally our family goes out for breakfast- and when we do, at least one of us (the Little Guy) get's pancakes! OK, not just any pancakes... BUTTERMILK PANCAKES, and boy am I happy that my Little Guy is at the stage where he needs his Mommy to take a 'taste test bite' to make sure his food is cool enough for him to eat- its my duty! And man, are buttermilk pancakes ever delicious!

Last weekend Dave (the official resident 'flipper') was available to make our family a large pile of "pan-y cakies" (yep, that's actually what we call them- but you'll most likely NEVER get Dave to admit that!!! Have I ever mentioned that I LOVE that man?)

...Anyway, I have a spectacular recipe to share!

Following the same pancake advice as I had posted before, mix, make and MMMM!

Dry Ingredients:
3 cups of flour
3 tablespoons of sugar
3 teaspoons of baking powder
1 1/2 teaspoons of baking soda
3/4 teaspoon of salt

Wet Ingredients:
3 cups of buttermilk
1/2 cup of milk
3 eggs
1/3 cup of melted butter

Directions: Combine the wet and dry ingredients in separate bowl until you are ready to cook your pancakes. Blend the wet and the dry well, but do not over stir! For large pan-y cakies (I couldn't resist) use 1/2 cup of batter. This recipe makes 12 large pancakes!

NOW, lets talk buttermilk just for a second. Buttermilk is often sold in small cartons of 16oz and 32 oz... but this pancake recipe calls for 24oz, purchase the 32oz carton ($1.59/Meijer) and reserve the remaining 8 ounces for...

HOMEMADE RANCH SALAD DRESSING!

1 cup of buttermilk (8 ounces- convenient, I know!)
1 cup of mayonnaise
1 Hidden Valley Ranch seasoning mix

Combine the above ingredients and chill for at least an hour before serving!

***Caution: You'll NEVER be able to make "homemade Ranch" just once! It will be begged for repeatedly!!! But, its worth it... every last drop!

Laura! It's like your recipe posts are just for me! I JUST recently (within the last couple of weeks) made my first batch of homemade ranch dressing, and I'm not kidding you, it is THE ranch dressing I've been searching for all my life. I'm already in need of another batch. I'm seeing much more salad in my future! :-)

P.S. I can testify - I've heard Dave use the phrase "pan-y cakies!"
