I personally LOVE keeping frozen veggies on hand to easily make Quiche, Faux Shepherds Pie, as additions to my favorite soups, and as healthy sides to standard dinners like grilled chicken. Inexpensive, yummy and easy to prepare!

I always love to keep frozen veggies in the freezer. They are a quick side dish, mixed veggies are great to throw in soup and casseroles. Last night I made tuna noodle casserole and used my free mixed veggies that I scored at Meijer this week.

By the way, I made your cheesy potatoes for Christmas and everyone LOVED them. There weren't any left over. I thought I mad enough to have some left over for my lunch the day after Christmas. Well, I was mistaken. I'm going to be making them again soon. Thanks for that recipe!

Mixed veggies, 1 cup mayo, crushed butter crackers = super yummy but bad for you side dish.
